Brussels Sprouts with Golden Raisins

Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • 1/4 cup golden raisins
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp balsamic vinegar
  • 1/4 cup toasted pine nuts (optional)

Instructions

Method: Roasting

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
  3. Spread the Brussels sprouts out in a single layer on the baking sheet and roast for 20-25 minutes until golden brown and crispy on the edges.
  4. In the last 5 minutes of roasting, add the golden raisins to the pan to allow them to plump up.
  5. Once done, remove from the oven and drizzle with balsamic vinegar. Garnish with toasted pine nuts if desired and serve warm.
