- 1 lb Brussels sprouts, trimmed and halved
- 2 tbsp olive oil
- 1/4 cup golden raisins
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp balsamic vinegar
- 1/4 cup toasted pine nuts (optional)

Method: Roasting
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
- Spread the Brussels sprouts out in a single layer on the baking sheet and roast for 20-25 minutes until golden brown and crispy on the edges.
- In the last 5 minutes of roasting, add the golden raisins to the pan to allow them to plump up.
- Once done, remove from the oven and drizzle with balsamic vinegar. Garnish with toasted pine nuts if desired and serve warm.
