Beef Kabobs with Chimichurri

Ingredients

  • 1 lb beef sirloin, cubed
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 2 tbsp red wine vinegar
  • 1/4 cup olive oil

Instructions

Method: Direct grilling

  1. Set the EGG for direct cooking at 400°F/204°C.
  2. Thread beef, bell pepper, and zucchini onto skewers.
  3. Brush with olive oil, salt, and pepper.
  4. Grill for 10 minutes, turning occasionally.
  5. Mix parsley, garlic, vinegar, and olive oil for chimichurri.
  6. Serve kabobs with chimichurri.
