Apple Walnut Muffins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 egg
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 apple, peeled and chopped
  • 1/4 cup chopped walnuts

Instructions

Method: Baking

  1. Preheat oven to 350°F/175°C and grease muffin tin.
  2. Mix flour, sugar, baking powder, baking soda, salt, and cinnamon in a bowl.
  3. Whisk together egg, buttermilk, oil, and vanilla. Add to dry ingredients and stir until combined.
  4. Fold in chopped apple and walnuts.
  5. Divide batter into muffin tin and bake for 18-20 minutes, until a toothpick comes out clean.
