- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp cinnamon
- 1 egg
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1 apple, peeled and chopped
- 1/4 cup chopped walnuts
Instructions
Method: Baking
- Preheat oven to 350°F/175°C and grease muffin tin.
- Mix flour, sugar, baking powder, baking soda, salt, and cinnamon in a bowl.
- Whisk together egg, buttermilk, oil, and vanilla. Add to dry ingredients and stir until combined.
- Fold in chopped apple and walnuts.
- Divide batter into muffin tin and bake for 18-20 minutes, until a toothpick comes out clean.
