Roasted Pineapple with Caramel Sauce

1. Stabilize the big green at 400°F (200°C) and insert the rotisserie attachment.
2. Place the pineapple on the rotisserie then rub evenly in the sugar, cinnamon, nutmeg, allspice, and salt mixture.
3. Spin until it is caramelized on the outside, about 10 minutes, during the last minute, baste with caramel.
4. Serve with ice cream and enjoy!

Caramel Sauce

1. Melt the butter in a medium heavy-bottomed saucepan (not non-stick) over medium heat.
2. Add the brown sugar, salt and heavy cream and stir the mixture with a rubber spatula until it's well blended. Bring the mixture to a boil, scraping down the sides occasionally, and boil it for 4 to 5 minutes.
3. Remove the mixture from the heat and stir in the vanilla extract. Transfer the sauce to a container to cool.
