Ingredients
- 2 cups grated zucchini
- 3 cups all-purpose flour
- 1 cup sugar
- 1/2 cup brown sugar
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 3 eggs
- 1 cup vegetable oil
- 1 tbsp vanilla extract
Instructions
Method: Indirect baking
- Set the EGG for indirect cooking at 350°F/177°C.
- In a large bowl, mix flour, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, whisk eggs, oil, and vanilla.
- Combine wet and dry ingredients, then fold in grated zucchini.
- Pour batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let cool before slicing.
