Zucchini Bread

Smoking Egg

Ingredients

  • 2 cups grated zucchini
  • 3 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3 eggs
  • 1 cup vegetable oil
  • 1 tbsp vanilla extract

Instructions

Method: Indirect baking

  1. Set the EGG for indirect cooking at 350°F/177°C.
  2. In a large bowl, mix flour, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk eggs, oil, and vanilla.
  4. Combine wet and dry ingredients, then fold in grated zucchini.
  5. Pour batter into a greased loaf pan.
  6. Bake for 50-60 minutes or until a toothpick comes out clean.
  7. Let cool before slicing.
