Rustic Peach and Thyme Galette

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and diced
  • 1/4 cup ice water
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 3 large peaches, sliced
  • 2 tbsp honey
  • 1 tsp fresh thyme leaves
  • 1 egg, beaten (for egg wash)

Instructions

Method: Indirect baking

  1. Set the EGG for indirect cooking at 375°F/191°C.
  2. Mix flour, butter, sugar, and salt in a bowl.
  3. Add ice water gradually and knead into a dough.
  4. Roll dough into a circle and place peach slices in the center.
  5. Drizzle with honey and sprinkle thyme.
  6. Fold edges over the peaches and brush with egg wash.
  7. Bake for 30-35 minutes until golden brown.
