Ingredients
- 4 bone-in pork chops
- 1/4 cup pure maple syrup
- 1/4 cup kosher salt
- 2 cups water
- 1 cup apple cider
- 1 tbsp black peppercorns
- 2 cloves garlic, smashed
- 1 sprig fresh thyme
- 1 tbsp olive oil
- 1/2 tsp black pepper
Instructions
Method: Direct grilling
- In a saucepan, combine water, salt, maple syrup, apple cider, peppercorns, garlic, and thyme.
- Heat until salt dissolves, then let cool completely.
- Submerge pork chops in the brine and refrigerate for 4-6 hours.
- Remove pork chops, pat dry, and rub with olive oil and black pepper.
- Set the EGG for direct grilling at 400°F/204°C.
- Grill pork chops for 4-5 minutes per side until the internal temperature reaches 145°F.
- Let rest for 5 minutes before serving.
