Maple Brined Pork Chops

Smoking Egg

Ingredients

  • 4 bone-in pork chops
  • 1/4 cup pure maple syrup
  • 1/4 cup kosher salt
  • 2 cups water
  • 1 cup apple cider
  • 1 tbsp black peppercorns
  • 2 cloves garlic, smashed
  • 1 sprig fresh thyme
  • 1 tbsp olive oil
  • 1/2 tsp black pepper

Instructions

Method: Direct grilling

  1. In a saucepan, combine water, salt, maple syrup, apple cider, peppercorns, garlic, and thyme.
  2. Heat until salt dissolves, then let cool completely.
  3. Submerge pork chops in the brine and refrigerate for 4-6 hours.
  4. Remove pork chops, pat dry, and rub with olive oil and black pepper.
  5. Set the EGG for direct grilling at 400°F/204°C.
  6. Grill pork chops for 4-5 minutes per side until the internal temperature reaches 145°F.
  7. Let rest for 5 minutes before serving.
