Lager-Roasted Vegetables

Ingredients

  • 2 cups baby potatoes, halved
  • 1 cup baby carrots
  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 1 cup cherry tomatoes
  • 1/2 cup lager beer
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

Method: Indirect roasting

  1. Set the EGG for indirect cooking at 375°F/191°C.
  2. Toss all vegetables with beer, olive oil, salt, and pepper.
  3. Spread evenly in a cast iron pan.
  4. Roast for 30-40 minutes, stirring occasionally.
  5. Serve hot.
