Dr. BBQ’s Roasted Upside Down Chili

Ingredients

  • 2 lbs ground beef
  • 1 can (28 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

Method: Indirect cooking

  1. Set the EGG for indirect cooking at 350°F/177°C.
  2. In a Dutch oven, brown ground beef, then remove excess fat.
  3. Add onion and garlic, cook for 2 minutes.
  4. Stir in tomatoes, beans, chili powder, cumin, paprika, salt, and pepper.
  5. Simmer for 1 hour, stirring occasionally.
  6. Serve hot.
