Ingredients
- 4 lb wild boar ham
- 2 tbsp chili powder
- 1 tbsp brown sugar
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tsp salt
- 1/2 cup apple cider vinegar
Instructions
Method: Low and slow smoking
- Set the EGG for indirect cooking at 275°F/135°C.
- Mix chili powder, brown sugar, garlic powder, salt, and pepper.
- Rub mixture onto boar ham.
- Smoke for 4-5 hours, basting with apple cider vinegar every hour.
- Let rest for 20 minutes before slicing.
