A convEGGtor, formerly named the plate-setter, is a practical, versatile, multipurpose tool that unlocks the full potential of your EGG. The convEGGtor turns your EGG into an outdoor convection oven, enabling indirect cooking, smoking, roasting and baking.
How do I Bake with a convEGGtor?
A convEGGtor looks like a ceramic pizza stone with three legs. To use the EGG as a wood fired oven, position the convEGGtor with the legs facing up. Place the cooking grid on the convEGGtor’s legs, and put your pizza stone on top of that. You can bake pizza, bread, biscuits and even cookies or desserts right on the stone. Although the direct heat from the fire is blocked, the convEGGtor allows hot air to circulate under and around the food and interior of the EGG in a convection pattern.
How do I Smoke and Roast with the convEGGtor?
To roast, smoke, or grill indirectly in your EGG, place the convEGGtor on the fire ring with the legs facing up. This acts as a barrier between the food and the direct heat of the charcoal fire, cooking food as if it were in a convection oven. Position your cooking grid on the three upturned ceramic legs and place food on the grid.
Pro tip: Use a drip pan beneath food directly on the convEGGtor to catch drippings or hold juice, wine, beer, stock, or other liquid to infuse foods with another layer of flavor.
Which Accessory Works Best with the convEGGtor?
The convEGGtor or half-moon convEGGtor can also be used in conjunction with the EGGspander to gain a second and even a third tier of cooking surface. Because of the unique design of the EGG, the convection effect ensures that food browns as perfectly on the upper rack as it does on the main cooking grid.
