Place the bacon in the cast iron skillet and cook until crispy. Once the bacon is cooked to perfection transfer to a towel lined plate. Remove the cast iron skillet from the EGG.
Brush the cast iron grate with the olive oil. Pat the salmon dry and season with the Big Green Egg Citrus and Herb Seasoning. Place on the cast iron grate and cook about 3 minutes per side. Remove from the EGG and let rest.
Spread the Herb & Citrus Mayonnaise on the whole wheat buns. Season the tomato with salt and pepper to taste. Add lettuce, tomato, bacon and salmon to the bun. Enjoy!
